The loin can be used for three different cuts of meat: the Porterhouse and T-Bone, the Sirloin, and the Tenderloin. All of these steaks are great for grilling. When filling out a cut sheet, you can usually get one or the other of these cuts, because they all come from the same area on the cattle.

Brisket

The brisket is a great cut for slow cooking, or slow roasting. Great for the smoker, or to made into stew. Often used for corned beef or smoked brisket

Cross Rib
Cross Rib Marinating Steaks or Cross Rib Roast
The Cross rib is a wonderful cut of beef for cooking in a slow cooker for a long period of time. It can be used for marinating steaks, but the large piece of collagen that runs directly through the middle of it makes it hard for barbequing. Most often it is cooked as a slow cooking roast.

Chuck (Bottom Blade)

Properly known as the bottom blade, this is a nice piece of meat for slow cooking. Great for marinating steaks as well as roasts, this cut has lots of flavour, and is very versatile.
